Ingredients
-
500 g mutton
-
3 medium onions, finely sliced
-
2 tomatoes, chopped
-
2 tbsp ginger-garlic paste
-
½ cup yogurt
-
3 tbsp oil or ghee
-
1 tsp red chilli powder
-
½ tsp turmeric powder
-
2 tsp coriander powder
-
1 tsp cumin powder
-
1 tsp garam masala
-
Whole spices, salt and fresh coriander to taste
Cooking Instructions
-
Prepare the masala: Heat oil or ghee in a heavy-bottomed pan. Add whole spices and sliced onions. Fry until golden brown.
-
Cook the mutton: Add ginger-garlic paste and mutton. Bhunao on medium-high heat until the meat browns and releases its juices.
-
Add spices: Mix in turmeric, red chilli, coriander and cumin powders. Add tomatoes and cook until soft.
-
Add yogurt: Lower the heat and gradually mix in whisked yogurt. Cook until the oil begins to separate from the masala.
-
Slow-cook: Add a little hot water, cover and cook until the mutton is tender. Alternatively, pressure-cook until tender, then return it to the pan.
-
Final bhunai: Cook uncovered, stirring frequently, until the gravy becomes thick and clings to the mutton. Finish with garam masala and fresh coriander.
Serving suggestion: Serve hot with naan, tandoori roti, paratha or steamed rice, along with sliced onions and lemon.
