Prawn Fried Rice Recipe

    Ingredients for Prawn Fried Rice

    • Prawns – 250 g, cleaned and deveined
    • Cooked rice – 3 cups, preferably chilled
    • Eggs – 2
    • Garlic – 1 tbsp, finely chopped
    • Ginger – 1 tsp, finely chopped
    • Onion – 1 small, chopped
    • Carrot – ½ cup, finely chopped
    • Capsicum – ½ cup, chopped
    • Spring onion – 2 tbsp, chopped
    • Soy sauce – 1½ tbsp
    • Chilli sauce – 1 tbsp
    • Vinegar – 1 tsp
    • Black pepper – ½ tsp
    • Salt – as needed
    • Oil – 2–3 tbsp

    👨‍🍳 Method

    1. Prepare the prawns: Clean and devein the prawns. Pat them dry and season lightly with salt and pepper.
    2. Cook prawns: Heat 1 tbsp oil in a wok or large pan. Add prawns and stir-fry for 2–3 minutes until cooked. Remove and keep aside.
    3. Cook eggs: Add a little more oil, crack in the eggs and scramble them.
    4. Add aromatics: Add garlic, ginger and onion. Stir-fry on high heat for about 30–40 seconds.
    5. Add vegetables: Add carrot and capsicum. Cook for 1–2 minutes while keeping them slightly crunchy.
    6. Add rice: Add chilled cooked rice and toss everything together on high heat.
    7. Season: Add soy sauce, chilli sauce, vinegar and black pepper. Mix well.
    8. Add prawns: Return the cooked prawns to the wok and toss for another 1–2 minutes.
    9. Finish: Add spring onions and give everything one final toss.

    For restaurant-style fried rice, use cold, day-old rice and cook everything on high heat. This keeps the rice separate and gives it that smoky wok flavor.
